What is pour-over coffee?

Pour-over coffee is a manual brewing method where hot water is poured by hand through a filter cone or dripper containing coffee grounds, resulting in a filtered cup without immersion.

Pour-over coffee is made by placing a dripper (typically a V60, Kalita Wave, or similar cone-shaped device) over a cup or carafe, lining it with a paper or metal filter, then pouring hot water over ground coffee by hand. The water flows through the grounds and filter into the vessel below, extracting flavor as it passes through.

The result is a clean, bright cup with distinct flavor notes. The manual control over water temperature, pour rate, and timing allows the brewer to influence the extraction. Paper filters trap oils and fine particles, producing a lighter body than immersion methods like French press. Metal filters let more oils through, creating a slightly fuller mouthfeel.

Cafes across Kuala Lumpur offer pour-over for several reasons. The method highlights the complexity of high-quality, single-origin beans, making it a staple in specialty coffee shops. Each cup is made to order, which slows service but appeals to customers seeking intentionality and craftsmanship. The ritual also fits the current cafe culture where brewing becomes part of the experience, not just a transaction. For cafes with trained baristas, pour-over demonstrates precision and knowledge, reinforcing their positioning in the market.
